INGREDIENTS
1 large zucchini
8 cherry tomatoes
1/4 small onion (finely chopped)
2 large handfuls kale
1 c tomato sauce (canned or homemade)
1/3 c black beans (canned or dried)
1 tbs garlic powder
1 tps onion powder
I tsp raw honey
1 tbs oregano
1 tbs Italian seasoning
1/4 C sharp cheddar cheese
2 tbs plain Greek yogurt
ZOODLE DIRECTIONS
1. Shred zucchini. (I used the large part of a cheese grater).
2. Half cherry tomatoes.
3. Add zucchini, tomatoes, 1/2 tbs garlic powder, and 1/2 tbs onion powder to a pan and simmer with water until desired tenderness.
4. Drain and set aside
BEAN INSTRUCTIONS
1. Cook beans. If you used canned you can just add them in with the next step.
SAUCE INSTRUCTIONS
1. Add all the ingredients except the 1/2 tbs of garlic and onion powder used above and kale. Simmer on medium heat for 10-15 min.
2. Add kale.
3. pour 1/2 of sauce on top of the zoodles and tomatoes and enjoy.
